There are two types of emulsifiers: oil-in-water (o/w) and water-in-oil (w/o). Each type of emulsifier has a specific role. The oil-in-water (o/w) emulsifier keeps the oil droplets packed in water. They are used more in cosmetic products for hydration: creams, body lotions. The water-in-oil (w/o) emulsifier keeps the water droplets packed in oil and is used in the fatter compositions: night creams, sun protection creams.
